With Valentine’s Day coming up, maybe you want to try breakfast in bed.
Here are some some of my “go to” breakfast ideas, that I think you will enjoy.
Eggs
Eggs are versatile, packed with protein and vitamins and easy to make. One of my favorite ways to eat eggs is by making a frittata. You could really customize this frittata recipe anyway you want but, the reason I like it is because it is delicious, it can me made ahead and frittatas are a great way to use up bits of leftover meats, veggies and herbs that may have ordinarily be thrown away.

Oatmeal
Oatmeal gets such a bad “rap” sometimes. But around my house, oatmeal is the breakfast of champions. Everyone from the 7 month old up gets oatmeal “their way”. My little man, get his oatmeal blended until smooth and mixed with breast milk. The four year old likes her oatmeal with raisins in the form of a “smiley face”. Everyone else customizes their bowl with mix-ins like nuts, fruit and spices.

Pancakes
Pancakes have to be one of the favorite breakfast foods of all time. Again, the thing with pancakes is, once you find a recipe that you love, you can just customize the toppings or batter to your liking. Anything that kids can make their own will get a big thumbs up. You can prepare pancakes using a box mix or using your favorite recipe and serve them alongside a topping bar with items like fruit, chocolate sauce, berries, honey, whipped cream, syrup and more.
Another alternative is to try something like these Mini-Popover Pancakes with Berry Compote. In the summer, when peaches are in season, these pancakes are a hit.
Around Christmas, try this Eggnog French Toast with Caramelized Bananas
Fruit and Yogurt
Fruit and yogurt is an quick and easy option that is both healthy and nutritious. Serve parfait in a wine glass for a presentation that is truly “first class”.
