Last night I made this delicious recipe from Ready, Set, Eat by ConAgra. It is a zucchini, black bean and rice skillet and it tasted fabulous.
Here’s a peek at how mine turned out…
To save money and increase my family’s veggie intake, we often have meatless dinners. Beans are healthy and affordable and if you get kids used to them while they’re young, you might get lucky and they’ll actually like them.
To make this dish a little more enticing for my kids I poured a little of their favorite ranch dressing on top. It actually tasted really good. It would also be great to have a side of sour cream and guacamole with it.

Goodness! That looks delicious. I hope my kids are going to like it. I am always in a struggle to get them to eat more vegetables. With kids, vegetables are always a hit or miss.

That looks great! I make a dish very similar to that, but in addition to the veggies, it has some smoked sausage.
