Bird’s Nest Cupcakes – The Sweetest Easter Treat

Spring is coming and we’re looking forward to the warmer weather and the sweet treats that come along with it.

Hey, everyone! Lisa here from Fabulous Habits and I am so stoked to share this sweet Easter treat here on 5 Minutes for Mom.

With spring also comes Easter. It’s definitely one of my top fave holidays. I think it has to do with all the pastel colors and the magic of the Easter bunny – what is there not to love?

Recently, I was going through my cupboard and found that I had cups of shredded coconut on-hand. I asked myself, “What could I make?! How can I get creative with this?”

And so, I made these Bird’s Nest Cupcakes and boy, were they a hit in my household!

How to Make Bird’s Nest Cupcakes

Ingredients

  • 1 dozen of your favorite vanilla cupcakes
  • 1 stick softened butter
  • 2 cups icing sugar
  • 3 tbsp milk
  • 1 cup shredded coconut
  • 36-42 candied chocolate eggs

Cool as a Cucumber

…okay, well, they’re not cucumbers, they’re cupcakes. But still, be sure your cupcakes are completely cool before decorating them.

Toasting Time

On a small, non-stick pan over medium heat, roast your shredded coconut for about 1-2 minutes until some are golden brown. Remove from heat and allow to cool.

Sweet, Smooth Buttercream

Using an electric mixer, beat together softened butter, icing sugar and milk on medium speed. Gradually increase the speed to high and beat until all ingredients are well-combined.

How to make buttercream icing for piping…

The ideal buttercream texture is smooth and forms semi-stiff peaks.

If you find your buttercream is too runny, add more sugar, 1 tablespoon at a time. If it’s too thick, you can thin it down with a little bit of milk (I recommend adding in ½ tablespoon at a time).

Pipe It Out

Scoop your buttercream into a piping bag with a round tip attached. Frost a large, round dollop of buttercream in the centre of each cupcake.

Coconut Topping

Place your toasted coconut in a small bowl. Dip each cupcake into the bowl so that the icing is covered with the coconut shreds.

Top it Off!

Top off each cupcake with 3-4 candied eggs.

  • Bake and cool vanilla cupcakes. They need to be completely cool before decorating.

  • Remove from heat and allow to cool.

Make Buttercream

  • Using an electric mixer, beat together softened butter, icing sugar and milk on medium speed. Gradually increase the speed to high and beat until all ingredients are well-combined.
  • The ideal buttercream texture is smooth and forms semi-stiff peaks. While mixing if the buttercream is too runny, add more sugar, 1 tablespoon at a time. If it becomes too thick, thin it by adding a small amount of milk, ½ tablespoon at a time, until it reaches the desired smooth texture.

Decorate with Icing

  • Scoop buttercream into a piping bag with a round tip attached.
  • Frost a large dollop of buttercream in the centre of each cupcake to form what will become the "nest".

Add Coconut Topping

  • Place toasted coconut in a small bowl.
  • Dip each cupcake into the bowl so that the icing "nest" is covered with the coconut shreds.

Decorate with Candy Eggs

  • Top off each cupcake with 3-4 candied eggs.
