  • 2 tablespoons olive oil
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cloves garlic, thinly sliced
  • 1 lemon, halved
  • Handful of Italian parsley

Instructions

Preheat the oven to 450 F

Spray a medium-size baking sheet with nonstick cooking spray.

Place the fish on the pan followed by the tomatoes, olives, onion, and lemon halves.

In a small dish, whisk together the oil, oregano, salt, pepper.

    I just made this for dinner. I used asparagus instead of tomatoes and green olives instead of black olives because I was out. It was quick, easy and delicious! Even my picky eater liked the cod. I will make it again with black olives, tomatoes and maybe some other vegetables. 😊
