Whether you are preparing a special cocktail for a party, a dinner for two, or a cozy evening by yourself watching Netflix on the couch, make your night sparkle with this divine Raspberry Sparkling Wine Cocktail.
It is a truly delightful and beautiful treat.
A massive number of local farms here in the Lower Mainland of British Columbia grow berries, especially blueberries. Recently, I went with a friend on a local wine tour to Lulu Island where I tasted their blueberry wine and their raspberry wine.
I loved them and bought them both, my mind filling up with recipe ideas as we drove home. (By the way, this post is NOT sponsored and I paid to attend the tour and I purchased the wines myself.)
The Lulu Island Raspberry Wine, which I used in this cocktail, isn’t actually sweet like the Lulu Island Blueberry Wine.
In fact, according to Lulu Island, their raspberry wine is actually a dry wine with a sweetness of 1 and alcohol content of 9.5.
In contrast, Lulu Island’s blueberry wine is medium-sweet with a sweetness of 4 and alcohol content of 12.5. Personally, I prefer off-dry or dry wine, so the Lulu Island raspberry wine is perfect for me.
For this cocktail, I also used an off-dry white sparkling wine, Bubble Boat Brut, from Stoneboat Vineyards in the Okanagan Valley of British Columbia.
The combination worked exquisitely and I will definitely buy more raspberry wine to make this cocktail again soon.
If you don’t have a raspberry wine, you could try any fruit wine or you could use a fruit liquor instead.
Even though raspberries are not in season, I found these perfect, juicy, organic raspberries at Costco. Sometimes Costco has amazing organic produce. Every time I am there and they have these raspberries in stock, I buy two packages.
To prep this cocktail ahead of time, wash raspberries and add 2-4, depending on their size, to the bottom of a champagne glass.
When you are ready to serve, fill the glass one third of the way with chilled raspberry wine.
Finish with chilled sparkling white wine.
Garnish with a sprig of mint if desired and serve immediately.
Raspberry Sparkling Wine Cocktail
Ingredients
- 1 part raspberry wine chilled
- 2 parts white sparkling wine chilled
- 4 raspberries
- 1 sprig mint
Instructions
- Wash raspberries.
- Add about 3 raspberries, depending on their size, to the bottom of a champagne glass.
- Fill the glass one third of the way with chilled raspberry wine.
- Finish filling the glass with chilled sparkling white wine.
- Serve immediately.
