Friendsgiving is all about celebrating your closest friends sometime around Thanksgiving. Most of us have a few friends that hold a special place in our hearts. Hosting a Friendsgiving dinner party is a perfect way to let your friends know how much they mean to you. We all have times when we lean heavily on them or take them for granted. This year take some time to let your friends know how much you appreciate having a great friend around.
Cranberries are America’s Original Superfruit®, they have long held a place at many Thanksgiving dinners so why not include them in your Friendsgiving party as well?
How about this Cranberry Pumpkin Bread recipe? No bread machine required! The cranberries offer a tart flavor that goes well with the sweetness of the pumpkin bread.
Cranberry Pumpkin Bread
- 3 cups bread flour
- 2 tablespoons pumpkin pie spice
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 3 cups granulated sugar
- 1 can 15 oz pure pumpkin (not pumpkin pie filling!)
- 4 large eggs
- 3/4 cup olive oil
- 1/2 cup water
- 2 cups fresh cranberries
- Preheat oven to 350 degrees.
- Grease & flour loaf pans.
- Sift together flour, pumpkin pie spice, baking soda, salt, & sugar.
- Add pumpkin, eggs, oil, & water, mix well.
- Fold in cranberries.
- Spoon batter into loaf pans.
- Bake at 350 - 60-65 minutes for regular size loaf pans.
