Vegan Apple Oatmeal Muffins

Vegan Apple Oatmeal Muffins

Ingredients

2 cups whole wheat flour
2 cups quick oats
3/4 cup Demerara or brown sugar
1 1/2 teaspoons cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup unsweetened applesauce
1/2 cup canola oil
1 1/2 cups soy milk
3 apples, peeled and diced into small pieces

Directions

Preheat oven to 350°F. Grease muffin tin(s) and set aside.

In a large bowl, mix together the flour, oats, sugar, cinnamon, baking powder and baking soda. Add the oil, soy milk and applesauce, mix well. Stir in the diced apples.

Fill the muffin cups 2/3 full with batter.

Bake for 20-25 minutes or until a toothpick inserted in the centre comes out clean. Let the muffins cool for a few minutes before removing from the tin. Allow to cool completely on wire racks.

Makes 14-16 muffins.

  1. Hungry, and not having planned meals ahead of time, I rummaged through my pantry and found that I had ingredients that could make some apple cinnamon muffins. So I scoured the web to find a recipe with the ingredients I already had and came across yours. I only had olive oil (not canola), regular vegan cane sugar (not brown sugar) and regular oats (not quick oats), and I had to work with what I had, but man was it absolutely delicious! While I know this recipe was posted quite some time ago, as a former blogger I like to thank those who took the time to post something delightful. So thank you! I will be adding this recipe to my list to remake. Cheers, Aubrey

  4. My sister is vegan, and it has been really interesting to cook with her. I am always adding more beans and veggies to the foods we cook, but I am definetely not ready to make the vegan plunge. I’m happy to eat yummy vegan recipes, though!

  5. We aren’t Vegan however when I am stuck for something for dinner.I will make use of the vegetables / beans in the house for soup or chili.

    I would like to make more meals including these muffins !! yum!

    1. I’m like that too Michelle. I’m not vegan, but I’m inspired by vegan recipes and want to increase the veggie and bean intake in my family.

      My mouth is watering for those muffins!
