
Unfortunately, no matter our feelings on the subject, dinner must be served each night. And I think that most of us seek to be cost-effective and healthy, which means we all need to have some sort of menu ready-to-go that we can serve our families.
As I looked through Katie Workman’s The Mom 100 Cookbook: 100 Recipes Every Mom Needs in Her Back Pocket, I realized that there is something in here for everyone: the descriptions, gorgeous photos, and Katie’s obvious love of fine food will definitely appeal to the more gourmet foodies out there; however, the straight-forward instructions will help and inspire those of us who are struggling; and picky kids don’t stand a chance against her tips to encourage children to try new things (like fish). The title of the introduction explains it all: “How to pick your battles and find happiness in the kitchen.”
But she’s also a realist and knows that some kids are not going to eat what we want to eat, and as adults, we don’t want to eat as simply as some kids do. Instead of making “adult food” and “kid food” each night, Workman offers the ingenious “fork in the road” concept on some of her recipes. Take a pasta recipe with a simple sauce and set some aside for the kids before adding more spices and vegetables to please the adults.
I highly recommend this book whether you are an accomplished cook or simply like to look.

My go to healthy meal is ginger chicken with veggies.
Mine is anything with chicken. Usually a stir-fry. Gets all done in one pot, and the veggies get into the meal. Plus I have experimented with different seasionings to make the same old stir fry just a bit different every time.
Lasagna is my go to meal.

My go-to dinner is whole wheat chicken wraps. I bake chicken tenders then put them in whole wheat tortillas with low fat ranch dressing, lettuce and tomatoes.

My go-to dinner is shrimp linguine! Super easy, takes 15 minutes, and tastes very gourmet. Butter, fresh garlic, parsley flakes, olive oil, fresh grated parmesan, and a little white wine (I prefer something sweet – New Age). Add raw peeled shrimp that have had the tails taken off, and cook until pink and no longer. Serve over noodles. So good and SO easy!
Our favorite go to dinner is spaghetti.

My crockpot is what I actually use for go to meals. I’ve learned it doesn’t matter what you throw into it will end up tasting pretty good Ha.. So you see I need this book so my kids don’t have to ask what’s for dinner & I say Crockpot surprise 🙂

1/2 lb ground sausage, 1lb mushrooms, 1lb pasta, 1/4 cup Alfredo sauce
Cook sausage until brown, add finely chopped mushrooms and sauté until soft. Cook pasta according to directions, we used fiori pasta or the butterfly ones. Drain pasta and add to mushrooms and sausage. Add Alfredo and eat.
my quick go to is to make a giant salad with all the veggies I have

Our weekly go-to meal is taco salad. Full of veggies, lean ground beef and black beans. What I love about it is everyone can make it their own; mine extra spicy, kids’ extra cheesy!
I think that my go-to dinner is probably spaghetti with homemade pasta sauce. I cook up a big batch in the crockpot and freeze it. Sometimes I’ll toss in things like shredded carrots.

Green chili chicken in a crockpot. Fool proof, makes enough to eat on all week (tacos, enchiladas, salads) and the kids love it.
The hubby and I make a mean hamburger, but that doesn’t mean that it’s necessarily healthy! Just that the kids will eat it without complaint. 🙂

I make a Cuban dish, picadillo, that I make with more sauteed cut-up vegetables and serve with black beans and white rice. I always have all the ingredients on hand.
I think that’s something my kids would love. I need to try that!
My go to is homemade chicken pot pie. Not sure if it’s amazingly healthy, but it has one pound of vegetables plus one pound of potatoes (I like to keep the skin on). I also make the crust so it’s awesomeness 🙂
