Crunchy Thai Cashew Rice Salad

Tonya here… We’re deep into the holiday season now and it seems like there’s never a quiet moment. So how do you get through the holidays with your sanity in tact, and what are your nuttiest moments? I’ll be sharing a delicious recipe for Crunchy Thai Cashew Rice Salad, as well as my own nuttiest moments… This post is sponsored, so extra thanks for sharing.

In between the holidays that are to be filled with roasts, baked goods, and casseroles sometimes you need something a little different. So above I’ve given you a peek at the delicious Crunchy Thai Cashew Rice Salad recipe that I’m going to share below.

Nutty Holiday Moments

But first, let’s have a laugh over some of those nutty moments during the holiday season. Here are a few of mine… Can you relate to any of these?

  • I was halfway through an epic pre-Thanksgiving break play date with school friends. I was making all the kids hot chocolate, and the dog was dancing under my feet and I accidentally ladled hot chocolate straight over my hand from the pot on the stove. OUCH. That was fun (and yes the burns to my hand are healing nicely).
     
  • Since my oven is so tiny, the Thanksgiving turkey barely fit and I had to use a long hook to turn the roasting pan just enough so that I could grab the handle to pull it out of the oven.
     
  • I was me baking yet another apple pie and accidentally (okay totally on purpose) over-filling it and it bubbled right over the sides and smoke came streaming out of the oven. That will teach me for being greedy for big pies.
     
  • Then there was the paint incident when my daughter decided to make handmade painted pasta necklaces for all of her girlfriends for Christmas and accidentally dropped bright green paint with the lid off and it splattered EVERYWHERE!
     

I expect another epic nutty moment this coming weekend when we go to the tree farm to chop down a tree and load it up on top of my car to bring home. I’m sure there will be a story or two to be told.

Thai Cashew Rice Salad

Try this Crunchy Thai Cashew Rice Salad Recipe

Crunchy Thai Cashew Rice Salad

Ingredients

  • 2 cups jasmine rice
  • 1 cup coconut milk
  • 1 cup water
  • 1 cup carrots shredded
  • 1 cup red cabbage shredded
  • 1 cup Gold Emblem Thai-style spice cashews
  • 1 cup bean sprouts
  • 3 green onions thinly diced
  • lime for garnish
  • cilantro for garnish
  • Your favorite Thai peanut sauce

Instructions

  • Bring the coconut milk and water to a boil in a medium-sized pot.
  • Add the rice, stir, reduce the heat to a simmer, and cook covered for 25 minutes.
  • Allow the rice to cool while you chop and shred your vegetables.
  • Combine the coconut rice, cabbage, carrot, cashews, and bean sprouts in bowl.
  • Garnish with green onions, squeeze lime over the top, add cilantro, and top with your favorite Thai peanut sauce.

    I am crazy for coconut, so I want to try the coconut!! There was this one time that my family did a steal the present from someone else, game/ornament exchange & there was this one ornament that everyone was “nutty” about. It was a pretty, glass robot.     The Thai Spice would be my favorite because the cashews could be used in a lot of oriental syle recipes, or even in a chicken casserole or a salad. A nutty holiday moment would be last week’s fiasco with the oven while making Christmas cookies. Even though knowing the oven handle was loose, I had started baking multiple trays of cookies. While they were cooking, the handle fell off, and we barely got the oven door open and fixed. Then we had to just play it by ear with the cookies, because they oven temperature was all off, and we didn’t know how long to give them. Happy ending – they all still ended up delicious and being gifted to lots of lonely folks!

  46. I think the Dill Pickle Cashews would be an interesting taste. I used to give my late husband some kind of nuts as one of his Christmas presents.
    One year I didn’t and he complained so the following year I got him peanuts, pistachios, cashews, macadamia nuts, almonds and mixed nuts. Wrapped each separately and put them under the tree.
    As he opened presents he was happy at first until he realized that’s all he had gotten….nuts and plenty of them. I then gave him a card with money in it and the smile came back.

Nuttiest holiday moment — one year my little cousin were not going to have any Christmas presents because their parents didn’t have it. I found out on Christmas day that they were without gifts. Everything is closed on Christmas — or so I thought — I found one store that was open (pharmacy type store) and bought them anything I thought would bring a smile on their faces! It really showed me that it truly is the thought that counts!!!!

  179. I would love to try two of them, I’ll pass on anything with heat spice! I bet my fav would be the dill pickle one. I really like cashews. Never bought any flavored ones, only plain and honey roasted. YUM. The only nutty moment I can remember is one time, after putting dessert on the table…. something scared the darn cat, which ran right across the table, AND across the cake. Two big footprints in it. LOL We just cut those out……………….

    My hubby would love to try the dill pickle ones. My grandpa use to give someone fake dog poo every Christmas. He also accidentally sprayed everyone in the room with pepperspray while we were opening gifts. It’s wasn’t fun at the time but is now.

    I would like to give the Dill Pickle a try. A funny nutty moment in Christmas past would be when our girls ages 8 & 10 made us coffee at 3am to get us up for Santa. Boy was that coffee black, rich, hard to swallow and some of the best coffee I ever drank.

    The coconut cashews will be for me! A nutty thing I do for the holidays is buy stuff ahead of time, stash it, and then forget where I stashed it! I bought a present for my granddaughter last summer, and now I can’t find it. Several years ago I bought some stuff, stashed it, and then forgot I stashed it! I found it two years later!

    I would love to try the coconut ones! One year, I had a friend go back to Hawaii to visit and she brought me a bag of Macadamia nuts. She said, you are so wrong – these are really cheap. Well, yeah – if they are still in the shell! It was very comical watching us try to get them open.

    The dill pickle flavored cashews sound intriguing! Our nutty holiday moment, so far this season, was planning family photos and having to put up with a down pour during our outdoor shoot, in the middle of the pasture! Dad saved the day, strategically placing a tall cover over the tractor. He got the barn in the background, dry kiddos on the tractor and everyone was able to smile, wet feet and all!

  210. I think I would like the coconut best! One year at Christmas our dogs got in a fight under the Christmas tree over a dog bed. We had to break them up, and nobody get hurt, but it was quite humorous.

    A nutty family story: Last year I bought pistachios for my husband. The ones I got came with a bag to put his shells. Does he use the bag? Nope! He can never find it.

    I would try the coconut cashews. I remember trying to go home for the holidays with college friends and they trusted me to drive their manual transmission cars through the snow. I didn’t drive manual transmission cars and I hated traveling in snow. They fell asleep and I had to stop and start at the toll booths. Yikes!!!

    My nuttiest holiday was thanksgiving two years ago. I don’t know why my issue was but every thing I touched I dropped. Pumpkin pie, dropped it. A dozen eviled eggs, dropped it, made more- dropped it. Fruit salad, dropped it. Dishes. Dropped. Needless to say, I wasn’t allowed to take the turkey out of the oven.

I’m thinking of the time I we went on a road trip to a wedding & I forgot to load the hanging clothes that were all my husband dress clothes for the wedding and rehearsal dinner.   254. I would like to try the Thai spice cashews. Two christmases ago I introduced pistachios to my one year-old daughter and she mistakenly called them baby cashews. Two years later the name has stuck. So everyone in our house calls still calls pistachios baby cashews.

    One of my “nutty” holiday moments: When I was a kid, we were having a Fourth of July BBQ. My mom asked me to carry the deviled eggs from the kitchen down to the backyard. I tripped on the steps and the eggs were all over. My family still teases me about it.

  279. Coconut Cashews sound so good! My nutty moment the first time I made lasagna for a holiday, when I went shopping I put 5 packages of noodles in the cart, and so forth. The little Italian grandmas were stopping me and asking me if I was having a huge get together, and I said just the family. That should have tipped me off, but I started making all of this and had enough for the US Army, Navy and maybe the Marines. It could have been an I Love Lucy episode I had lasagna in every room, used every tray and dish! There was so much after we ate I gave everyone tons and I still had enough to eat for months!
