This healthy salad is so delicious even my 12 year old boy loved it and said, “You have to make this again… exactly like this!“
The brightly colored and sweet tasty beets liven up this salad while the kale adds even more nutrition. Paired with pears and walnuts, this simple salad recipe is fancy enough for a starter at a dinner party yet easy enough for a weeknight dinner.
Beet and Pear with Baby Kale Salad
Ingredients
- Baby Kale
- Baby Spinach
- Pears diced
- Walnuts
- Cooked Beets diced and sliced beets on the side
- Feta Cheese
- Grilled Chicken optional
Red Wine Vinegrette
- 1 part Red Wine
- 1 part Olive Oil
- sprinkling of Sea Salt
- sprinkling of Salad Herb Seasoning
Instructions
- Boil or roast beets. (One easy way to roast beets is to wash the beets, then lightly coat with olive oil, wrap in tin foil and bake for 45-60 minutes at 375F.)
- Dice beets
- Layout salad greens
- Top with chicken, pears, beets and feta cheese
- Drizzle dressing on top
