3 Ingredient Pumpkin Spice Cookies from 5 Minutes for Mom

I am excited to share with you my 3 Ingredient Pumpkin Spice Cookies recipe.  So easy, but so yummy!

I got this recipe from a friend years ago when I was still a single gal in college, and I have been making it every fall since that time.  I loved it for its convenience and simplicity as a busy college student, and I love it for the same reasons as a busy mom.  It is even simple enough for you to allow your young kiddos to help, or to allow your older kiddos to make independently.

To make this recipe you will only need three ingredients: a can of pumpkin, a box of spice cake mix, and a cup (or so) of chocolate chips.

Dump your three ingredients into a bowl and mix well.

Now simply scoop spoonfuls of the batter onto a greased cookie sheet and bake for about 20 minutes at 350 degrees.

Afterward, if you’re lucky, you can enjoy them with your cute sous chef.  Isn’t my sous chef just the cutest thing ever?!  He is my oldest, and he loves to cook and do projects with mom while his baby sister is sleeping.

Pumpkin Spice Cookies

An easy pumpkin spice cookies recipe that your kids will love helping make.

Ingredients

  • 1 box spice cake mix
  • 1 can pumpkin 15 oz
  • 1 cup chocolate chips
  • 1/2 tsp pumpkin pie spice optional

Instructions

  • Combine all ingredients in a large bowl and mix well.
  • Scoop spoonfuls of batter onto a greased baking sheet. (Don't make the cookies too large, or they may take longer to cook through.)
  • Bake at 350 degrees for approximately 18 to 20 minutes.

Notes

Cake mix box sizes have gotten slightly smaller in recent years. This recipe originally used a 15.25 oz, but most boxes these days now only have 13.25 oz of cake mix in them. 
Test the cookies with a toothpick to ensure they are cooked through.

    Not sure what I’m doing wrong. My cookies came out very gooey still, like they were not cooked through. What am I doing wrong?

      Hi Kimberly, what size can of pumpkin did you use? This recipe uses a 15 oz can of pumpkin, but often in Canada pumpkin is sold in larger 796mL/28 oz cans.

      One other issue might be if the cookies you formed were on the big side. We’ve heard that if the cookies are too large, they take longer to cook through.

    I was so excited about this post until I got to the grocery store and couldn’t find “Spice” cake mix! I am writing from Canada, but what stores sell it in the States? I might just have to ask a friend to send me some!
