Top It With Bacon — Three Recipes for Bacon Lovers

When it comes to bacon, I can eat it any time of day. Especially, if that bacon is mixed in with some sweet.

So when Ritz Canada asked me to come up with some recipes for their new Ritz Bacon Crackers, I jumped at the chance to cook up some bacon and call it work…

Egg and Avocado Salad with Bacon Crackers

First up, I made an egg salad with avocados — topped with bacon crumbles of course.

Take egg salad to a new level with avocado and bacon -- all sitting on top of Ritz Bacon Crackers

Ingredients

  • Hard boiled eggs
  • Avocado
  • Mayonnaise
  • Mustard
  • Lemon juice
  • Cooked bacon - crumbled
  • Ritz Crackers - Bacon Flavoured optional

Instructions

  • In a bowl, use a fork (and/or knife) to smash and crumble hard boiled eggs
  • Add diced avocado
  • Add in mayonnaise (1-2 tsp for every 2 eggs,) mustard (1/4-1/2 tsp for every 2 eggs,) and lemon juice (1/4 tsp for every 2 eggs)
  • Mix and spoon onto crackers and top with bacon crumbles
  • I used Ritz Bacon Crackers, but Ritz Original or Ritz Buttery would be great too

Chocolate Dipped Bacon Crackers

Next, it was time for some sweet to add to the savory. Who doesn’t want to add some chocolate to their bacon — or bacon to their chocolate.

Ingredients

  • Chocolate candy melting wafers
  • Cooked Bacon - crumbled
  • Rtiz Crackers - Bacon Flavoured optional

Instructions

  • Melt chocolate wafers in microwave safe bowl for 1 minute and stir well
  • Return to microwave, stirring every 30 seconds until most of the wafers are melted, being careful not to burn
  • Stir until all chocolate has melted and is smooth
  • Dip crackers in melted chocolate
  • Sprinkle with crumbled bacon
  • Cool on parchment paper

Ingredients

  • Vanilla ice cream
  • Peanut butter cups
  • Chocolate candy melting wafers
  • Ritz Crackers - Bacon Flavoured optional

Instructions

  • Smash peanut butter cups into vanilla ice cream
  • Return to freezer to firm up ice cream again if time allows
  • Sandwich a small scoop of ice cream between crackers
  • Drizzle with melted chocolate
  • Sprinkle with crumbled bacon
  • Serve immediately

 

As I mentioned in the recipes, I used the new Ritz Bacon Crackers for my recipes. But if you don’t have any of the bacon flavoured crackers handy, Ritz Original or Ritz Buttery would taste great too.
