Ingredients
2tablespoonsolive oil
1poundchicken breast
1medium onion diced
3large carrots diced
2celery stalks diced
3clovesof garlic diced
salt and pepper to taste
1medium lemonzest and juice
1fist full of fresh gingerwashed with skin on
2quartsof chicken broth
1can of organic coconut milkoptional
Instructions
Heat olive oil over medium high heat
Add chicken and brown
Add onion, garlic, carrots, celery, salt and pepper
Cook till softened (approx 5 mins)
Add 2 quarts of chicken broth and ginger with the skin on
Bring to a boil
Reduce heat, simmer for 35-45 minutes (the longer you boil ginger the stronger it is)
