Guiness Brownies

or any stout beer (I actually used Murphy’s Stout. Shhhhhhh!)

Butterscotch Fudge

unsalted butter

brown sugar

fine sea salt

confectioners' sugar

heavy cream

vanilla paste
salted pretzels
Instructions
Make Brownies
Preheat oven to 350 degrees F.
Grease a 9 by 13 baking pan or line it with parchment paper.
Melt butter and chocolate in saucepan on medium heat.
Stir in sugar and brown sugar and then remove from the stove.
Pour into a stand mixer bowl.
Use the paddle attachment to mix in eggs one at a time.
In a separate bowl mix together dry ingredients.
Alternate adding dry mixture and beer to the batter. You should begin with the dry ingredients and also finish with dry.
Add chocolate chips and gently fold into batter.
Pour batter into pan.
Bake for 25 to 30 minutes.
Make Butterscotch Fudge
Melt butter and brown sugar over medium heat until is starts to boil.
Simmer for 1 to 2 minutes.
Take off the stove and add salt.
Using paddle attachment in stand mixer, mix together confectioners sugar, cream and vanilla.
When it is thick and like a paste, gradually add the mixture of melted butter and brown sugar (cool it first).
Beat on medium speed.
Once well mixed, pour icing on cooled brownies.
Place a pretzel where each piece of fudge will be cut.
