Avocado Feta Salsa

Fresh tomatoes, avocados, feta and cilantro make this a wonderful summer time dip. Serve it with tortilla chips or crackers.

Ingredients

  • 4 vine ripe tomatoes chopped and drained
  • 2 ripe Haas avocados chopped
  • ¼ cup red onion finely chopped
  • 1 clove garlic minced
  • 2 Tbsp cilantro chopped
  • 1 Tbsp olive oil
  • 1 Tbsp red wine vinegar
  • 3.5 oz Athenos reduced fat feta cheese crumbled
  • 3.5 oz Athenos reduced fat tomato and basil feta cheese crumbled
  • ½ tsp fresh ground pepper

Instructions

  1. In a bowl, combine tomatoes, avocados, onion, and garlic.
  2. Mix in cilantro.
  3. Gently stir in olive oil and vinegar.
  4. Then stir in feta.
  5. Add fresh ground pepper to taste.
  6. Cover, and chill for 2 to 6 hours.
