Baked Potato Salad with Peas and Bacon

  • 1 large baked potato
  • 1/2 cup frozen peas thawed
  • 1/2 cup bacon cooked & crumbled
  • 1 garlic clove minced
  • 1/4 olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon Dijon mustard
  • 1/8 teaspoon pepper


  1. To make the dressing, add the apple cider vinegar, garlic, pepper, and Dijon to a large bowl. Whisk to combine.
  2. Slowly stream in the olive oil, whisking constantly to emulsify.
  3. Add the bacon, peas, and half the chives. Stir to combine.
  4. Cut the potato into bite-size pieces, and add them to the bowl.
  5. Gently toss the potatoes in the dressing until thoroughly coated.
  6. Taste the salad and adjust the salt and pepper to your liking.
  7. Serve with the remaining chives sprinkled on top.
