Lightened Up Broccoli Salad with Bacon
Broccoli salad is perfect any time of year. It's a great side dish or even a meal in itself!

broccoli florets

cooked
chopped bacon

frozen peas
thawed

sweet red apple
chopped

red onion
thinly sliced

green onion

pumpkin seeds
toasted
Dressing Ingredients
7
ounces
plain Greek yogurt

tablespoons
apple cider vinegar

teaspoons
Dijon mustard
2
packets of Truvia or any sugar substitute
1/4
teaspoon
salt
1/4
teaspoon
black pepper
Instructions
Add the dressing ingredients to a small bowl and whisk until smooth.
Add the salad ingredients to a large bowl and stir to combine.
Pour the dressing over the salad and stir until thoroughly combined.
Serve immediately or chill before serving
If desired, garnish with extra pumpkin seeds, bacon, and green onion.
