Immune-Boosting Lemon Ginger Chicken Soup

Packed with the goodness of garlic, ginger, lemon, and coconut milk, this Lemon Ginger Chicken Soup not only tastes delicious on a cold winter day, but is loaded with superfoods to help you power through cold and flu season.
  • 2 tablespoons olive oil
  • 1 pound chicken breast
  • 1 medium onion diced
  • 3 large carrots diced
  • 2 celery stalks diced
  • 3 cloves of garlic diced
  • salt and pepper to taste
  • 1 medium lemon (zest and juice)
  • 1 fist full of fresh ginger (washed with skin on)
  • 2 quarts of chicken broth
  • 1 can of organic coconut milk (optional)
  1. Heat olive oil over medium high heat
  2. Add chicken and brown
  3. Add onion, garlic, carrots, celery, salt and pepper
  4. Cook till softened (approx 5 mins)
  5. Add 2 quarts of chicken broth and ginger with the skin on
  6. Bring to a boil
  7. Reduce heat, simmer for 35-45 minutes (the longer you boil ginger the stronger it is)
  8. Remove the ginger and discard
  9. Remove the chicken, shred and set aside
  10. Add lemon zest and squeeze lemon to taste
  11. Continue to simmer for 15 minutes
  12. Add shredded chicken
  13. Add 1 can of organic coconut milk (optional)
