Oven Roasted Potatoes & Peppers
 
Ingredients
  • 12-ounce bag red potatoes
  • ½ red bell pepper, sliced
  • ½ orange bell pepper, sliced
  • ½ yellow bell pepper, sliced
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Fresh basil leaves, optional
Instructions
  1. Preheat the oven to 450 Degrees F. Spray a large baking sheet with nonstick cooking spray.
  2. Add the potatoes to a large bowl along with 1 tablespoon of the olive oil, ¼ teaspoon of the salt, and ⅛ of the teaspoon pepper. Toss to combine and pour onto a baking sheet, leaving enough room in the middle for the peppers and onions.
  3. Add the peppers and onions to the bowl along with the remaining olive oil, salt, and pepper. Toss to combine and pour onto the center of the baking sheet.
  4. Bake for approximately 25 minutes or until the potatoes are tender.
  5. Just before serving, sprinkle with freshly torn basil.
